We are a group of nature lovers who were fascinated by the olive fruit and discovered more and more magical benefits as we researched.
In fact, the story begins in 2015, upon the recommendation of our professor abroad. Based on the knowledge that olive oils with 400 polyphenols, which are used in cancer treatments and cosmetics in Spain, are obtained from olives special to our region, we start this adventure by scanning the region and literature only in Fethiye and its surroundings for 1 year. . And in the end, it is decided to give heart to this job with excitement…
As of the end of 2015, we are starting to collect our first olives. Our goal is big; We will obtain these olive juices for medicinal purposes, and we will take great steps on this path, even if it is difficult and costly.
Along with our own gardens, we undertake the maintenance and harvesting of the olive groves we like and know. We get permission to collect olives from forest lands in Muğla region. Instead of the trees owned by everyone on the plains, we prefer the trees on the slopes that no one touches. Sometimes we have difficulty in reaching the trees we see close, sometimes we can't find a flat to build a ladder to reach the branches of the trees we touch. We go to the bays without roads by boat. 100-150 kg per day. We are working without rebelling against the 25-30 kg brought by the teams that can collect it. 10 kg of grafted trees on flat land. 3-4 lt of the product. While the oil is being taken, it comes 1 lt. We have to squeeze more than 10 kg of olives for oil.
In September-November, we are greeted like aliens when we tell our teams that we will collect green olives that have not yet started to darken, and that have the highest fresh fruit flavor, and that we will put them in separate baskets as intact, less stained and highly stained. We try to explain the importance of the concept of EARLY HARVEST to our employees, as they look at us strangely as we pick olives before they start to get oiled…
We hit the road at dawn in the morning. We collect our olives one by one by hand without dropping them on the mountains and slopes. We tighten the morning harvest in the afternoon and the afternoon harvest in the evening without waiting. With the awareness that the olive squeezing method is the factor that directly affects the quality, sensory analysis, nutritional value and aroma of olive oil, we carry out our squeezing with the COLD Squeezing method in our boutique machine operating at 17-23 degrees.
We are very happy to be able to reach 751 mg/kg polyphenol values in our first year…
So what was the POLYPHENOL that we ran after and suffered so much for? Polyphenols are compounds in which there is more than one phenol group in each molecule. Polyphenols are commonly found in plants and are responsible for plant coloration, for example leaf color in autumn. Polyphenols, as antioxidants, have the ability to stabilize free radicals formed in the human body for various reasons. They keep the metabolism fit by removing various reactive oxygen species from the cells. When consumed regularly, it reduces the risk of many chronic diseases, even cancer, cardiovascular diseases and malfunctions in the nervous system. There is evidence that polyphenols inhibit cancer formation and tumor growth. Polyphenols can interfere with reactive elements, cancerous and mutated cells, activate the main proteins that control cell proliferation, and prevent the emergence of certain cancer-related genes. It is now possible to reach quite a lot of research done by important institutions on these issues on the internet. The polyphenols produced by olives are the biggest guarantee of its longevity.
Our body cannot benefit from all the polyphenols in every fruit and vegetable. For example, although there is 5000 mg/kg of polyphenol in apples, it can only take 0.2% of it. However, it can absorb 90% of the polyphenol olive oil drunk on an empty stomach in the morning, and can absorb 45-55% of the beneficial compounds in it. In simple terms, 10 soldiers can be sent to the body, as in the apple example, while 450 soldiers can be sent with 900+ polyphenol olive oil.

With this content, you can use it for wrinkles on your face, to moisturize your body or to save your baby from diaper rash with peace of mind. You may know that squalene is found mostly in deep-water sharks, which even makes up at least 30% of their body weight. Thanks to this oil, they live for a long time in deep waters and do not get cancer at all. Because squalene is hydrogenated when it comes into contact with water, it releases oxygen in the water. Maybe you have heard of ozone therapy in cancer treatment?
The currently accepted standards, namely categorizing olive oil as extra virgin (NSZ), extra virgin first (NSZB) based on the amount of oleic acid in it, is insufficient to define the categories of olive oil we produce. Especially Fenolive and Zeytin Hanım Gold, in terms of production methods, must already be NSZ. Categories have started to emerge according to the level of polyphenols contained in the oils, in line with the European Union Health Declaration. We have combined this with our brands for you, and we have made a table as follows.
Riviera is not a natural oil. Refined oil with a maximum acidity of 0.3 is obtained as a result of refining the oils that are not suitable for direct consumption, that is, chemically washing (with methods that do not change the natural triglyceride structure of crude olive oil). The oil obtained from the mixture of refined olive oil and natural olive oils suitable for direct consumption and whose acid level is not more than 1.0 is also called Riviera Olive Oil. In summary, Riviera is not a completely natural oil. Sunflower oil and corn oil are fully refined, they are not natural.
Let's go back to our healthy, natural oils. Here we would like to open a separate paragraph for Fenolive. We also divided Fenolive into 3 in accordance with the same statement. The polyphenol levels here are in COI/Doc. It is given according to No:29. Measurements are also made with other standards in the world. In those measurements, it is possible to see 1800's numbers or something. But the comparison is not an apples-to-apples comparison. Other components are also taken into account in that measurement method. Until last year, laboratories in Turkey (what we know) were showing 800 mg/kg above as >800 mg/kg, which is not found in an oil with a polyphenol level. As of this year, with our intense desire, they have started to show more than 800 (although there are deviations) in full numbers (as in our record holder Fenolive… 921 mg/kg). We have all our polyphenolic oils laboratory analyzed at the IOOC accredited AYTB, which is definitely one of the most reliable and respected laboratories in Turkey.
Let's put the traditional natural olive oil categories below in terms of general culture.
In the light of all this information, we recommend that you use Fenolive for health purposes (for example, drinking 40cc in the morning on an empty stomach…), consume Zeytin Hanım Gold raw (for example, in a salad, or on top after your meal is cooked…), and Zeytin Hanım while cooking your meals. We recommend that you use Zeytin Hanım Beauty directly on your skin. Let's not cook polyphenol-rich oils so that we do not lose valuable substances for health. Because most of the polyphenols are lost with heat. This also means that cold-pressed oils are more beneficial for health.
Fenolive is not a drug. It is a fruit juice that is obtained by completely natural methods, does not contain any additives, and is obtained by processing the fruit of special olives with the right processes. If you are being treated for any disease, do not use it without consulting your doctor. It can increase or decrease the effects of the drugs used.
Why did we have a special machine made? Before starting this business, we thought a lot about whether we should produce lithographs. We examined both lithographic systems and polyphenols… We saw that some of these polyphenols were flying in contact with the air. In other words, we would lose some of our polyphenols that we looked at like our eyes in the stone head. Unfortunately, we gave up on the nostalgic lithograph inherited from our grandfather because of this.
Of course, it is important to produce the oil... But it is also very important to store it correctly...

If you can provide these conditions at home, you can store your oil for a longer period of time without losing its value. Please also keep your polyphenolic oils closed. Protect from sunlight and heat.
Please do not choose oils that do not have a production approval number, are sold in plastic bottles or in light colored bottles. An oil without a production number indicates that the manufacturer does not own the oil. It is not legal. When you encounter a problem, you will not find an interlocutor. Storing oil in plastic bottles is also extremely harmful to health.
